Bay of Fires is the Tasmanian winery of the Hardy group; Fran Austin is the winemaker.

This riesling is a thrilling wine that really leaps from the glass. It is fresher, more aromatic and livelier in the mouth than most 2007 Aussie rieslings – generally not a great riesling year. Green limes and lemons, a twist of honey, turning juicy in the mouth with a touch of sweetness well balanced against frisky acidity. It finishes quite firmly but really sings on the palate: a captivating wine. Just 12 per cent alcohol, too. Drink now or cellar for seven years.

Suggested food pairing: abalone, scallops, crayfish and most white-fleshed fish, pan-fried and served in a buttery sauce.
